Creamy Vegan Mac N "Cheese"

Lauren McHugh is a self-admitted cheese addict and Beachbody coach at Lauren McHugh Fitness. In an attempt to appease her cheese cravings she decided to try a vegan mac 'n' "cheese" recipe. You may ask like she did, "how can VEGGIES taste like CHEESE"? Well, they're not really supposed to, but it does surprisingly taste very similar and makes mac 'n cheese as healthy as it can be while taming the craving for cheese. And, of course, we all know that "cheese" makes everything taste better or so i have been told.


Ingredients:

  • 10 ounces dried Whole Grain Macaroni

  • 1 cup peeled and diced potatoes

  • 1/4 cup peeled and diced carrots

  • 1/3 cup chopped onion

  • 3/4 cup water from the boiled veggies

  • 1/2 cup raw cashews*

  • 1/4 cup coconut milk

  • 2 tbsp nutritional yeast

  • Sea salt to taste

  • 1/4 tsp garlic powder

  • Pinch cayenne

  • Pinch paprika

  • Whole Wheat Breadcrumbs (optional)

*Can be purchased at a whole foods market
